Almond Butter Chocolate Chip Oatmeal Cookies.
So - this week I am trying to eat very very healthy - a little detox of sorts - mainly just avoiding all of the common allergens - to give my body a little time to heal after the bombardament of holiday decadence. Problem #1: It's only Monday night and I really want some dessert. I have cut out wheat, dairy, soy, peanuts, eggs, refined sugars(just for a week) - basically we're eating veggies, fruits, lean meats, and rice. I've already eaten a lot of fruit today. I don't want fruit at night - I want cookies. So these little babies were born. YUM!!! They even passed the hubby test :)
Almond Butter Chocolate Chip Oatmeal Cookies
1 cup of oatmeal (I used quick cook)
3/4 cup of Almond Butter
1 banana - mashed
1/3 cup of chocolate chips or raisins
Preheat oven to 350. Mash the banana and add Almond Butter.
Add the oatmeal and chocolate chips or raisins. Mix well. Drop in spoonfuls onto cookie sheet and bake for 7-9 minutes.
Enjoy your guilt free treat!

Yum! I'm trying to get back on track with that stuff too! I have a good peanut butter cookie recipe too that has one egg and some sugar but no gluten!

1 C peanut butter (or other nut butter)
3/4 C sucanat (or other sugar, like date sugar, coconut sugar, or rapdadura)
1 tsp baking powder
mix all ingredients together and put small spoonfuls on baking sheet. do this fork thing that you do with pb cookies.
350 degrees, check at 7 minutes or so
They taste really yummy!
What kind of chocolate chips do you use that have no refined sugar? Looking forward to hearing!

well.....okay you caught me cheating just a tiny bit ;) but you could use carob chips instead - I don't think they have any sugar - or the raisin option.

I was sick of carob and chocolate chips being so full of sugar. Make your own or use 85% chocolate bar cut up. Carob chips can be made essentially with coconut oil and carob powder. heat it up on double boiler, pour it out into greased pan, cool, break it up. I'm about to go make this recipe- I'm so excited at its health and simplicity. yay! I got a box of bananas to use up. If you ever give dumpster diving a chance, you will have many delicious bananas.
